Black Bean Soup

From Betty Crocker's Cooking for Two
Serves 2
Time: 1 hour

*1 can chicken or vegetable broth
*1 can black beans, drained and rinsed
*1 tsp chili powder
*1/2 tsp ground cumin
*1/8 tsp crushed red pepper
*1 clove garlic, finely chopped
*1 jalapeno, finely chopped
*1 small onion, chopped
*1 carrot, sliced
*2 tbsp tequila

Toppings
*diced jicama
*cheddar cheese, shredded
*tomato, chopped

1. Combine all ingredients but the toppings in a pot and heat to boiling. Reduce heat, cover and simmer for one hour.

2. Working in two or three batches, blend the soup in a blender until smooth. Pour into serving bowl and add toppings.
